recipies worth sharing

I've made some really easy and delicious meals lately that you should try when you're looking for something new. The best part is that all of these freeze well, so I saved them in individual portions for lunches and dinners on my own.

I'm a genius.

Brown Sugar Chicken

I started with 4 frozen chicken breasts in the Crock Pot.
Then I mixed:
1 cup brown sugar
1/4 cup 7 up
2/3 cup vinegar
3 large cloves garlic, minced
2 Tbs soy sauce
1/2 tsp ground black pepper

Pour over the chicken and cook on low for 6ish hours. I took the chicken out around 5 hours and shredded it because I feel like the meat goes farther when you're not working with big hunks of it and because I'm a freak about making sure meat is fully cooked (Seriously, when I bake meats it always ends up dry just so I'm sure no one will get sick from it...) Serve this over rice.

This turned out really good and not as sweet as it sounds. I even brought it over to a friend who had just had a new baby with out having eaten it myself, but they liked it at their house too. So try this one.


Chicken and Dumplings

Grill 2 or 3 chicken breasts until fully cooked.

In a pot, mix:
½ small onion, finely diced
16 oz Chicken Broth
1/2 cup of water

When the onions are soft, add the chopped up chicken.

Mix:
1 package Chicken Gravy Mix
1 cup half & half
Stir this into the pot and bring to a boil to thicken it slightly.

One it reaches a boil, add:
1 cup frozen peas
1 cup chopped fresh carrots
1 cup frozen corn
Salt and Pepper, to taste

Mix:
2 cups Bisquick
2/3 cups warm water

Drop by spoonfuls into the pot so that it covers the whole thing. Reduce hear to medium low and cover. Steam the dumplings for 8-9 minutes.


Costa Vida Chicken

Combine:
1/2 small bottle Kraft Zesty Italian Dressing
1 Tbsp chili powder
1 Tbsp cumin
3 cloves garlic, minced
Pour over:
3 or 4 frozen chicken breasts

Cook all together in a crock pot for 4 hours, shred meat and cook 1 additional hour.

This worked well as tacos, but I think you could eat it with rice,or over chips as nachos. We liked these so much I made them twice in one week.


Buffalo Chicken Soup

Combine in a crock pot:
2 frozen chicken breasts
2 tablespoons olive oil
1/2 an onion, diced
2 garlic cloves, minced
Mix :
1 tablespoon flour
16 ounces chicken stock
1/2 cup Frank's Buffalo wing sauce
Pour over chicken.

Cook for 4-5 hours. Remove the chicken and shredded it up. Toss it back in along with
1/2 cup cheddar cheese
1/4 cup Parmesan cheese

Honestly, I was nervous about this one, but it was delicious, and can hardly wait to make it again.
