It seems like the whole apartment gets so hot when I cook so I’ve started to use the crock pot more. Here are a few recipes from 101 More Things to do with a Slow Cooker that turned out to be tasty. If you try them let me know what you think!
Cheesy Chicken
4-6 boneless, skinless chicken breasts
2 cans cream of chicken soup
1 can cheddar cheese soup
1 tsp rosemary or dill
Place chicken in greased slow cooker. In a bowl, combine remaining ingredients and pour over chicken. Cover and cook on low for 6-8 hours or on high 3-4 hours. Makes 8-10 servings.
Now of course I didn’t follow the directions. I used two chicken breasts and one can of chicken soup. I don’t have any rosemary or dill so I sprinkled pepper, parsley, paprika and garlic powder. I also added sliced carrots, celery, and onions. I served it over brown rice.
I celebrated Cinco de Mayo with the following dish:
Zesty Bean Burritos
2 cans pinto beans w liquid (I used black beans)
1 medium onion, chopped
1 tsp chili powder*
1 tsp ground cumin*
¼ tsp cayenne pepper*
*I used some taco seasoning instead
Combine all ingredients in a greased slow cooker. Cover and cook on low heat 5-7 hours (definitely 7 hours to get the beans super soft) Mash beans w potato masher. I also added some browned and drained ground turkey and a drained can of corn for the last hour or so. Spoon bean mixture onto warm tortillas. I recommend whole wheat.
This last one looked totally questionable on paper but I had all the ingredients in the house and didn’t feel like going shopping or ordering in so I gave it a try. I’m glad I did because it turned out to be a new favorite.

1 cup soy sauce
1 cup sugar
1 tsp garlic salt (or garlic powder and salt)
½ c chopped onion
Place chicken in greased slow cooker. In a saucepan, combine soy sauce, sugar, garlic salt, and onion. Bring to a boil then pour sauce over chicken in slow cooker. Cover and cook on low heat 6-8 hours, or on high heat 3-4 hours. Makes 4-6 servings.
I served this over whole wheat pasta, corn and peas with some butter and parmesan cheese on top.

I have been looking for some good crock pot recipes, and I can't wait to try all of these!
Have you seen this blog? http://crockpot365.blogspot.com/ The lady made a resolution to crock pot every day for 2008 and still does sometimes. I bought a crock pot last month and have been using it more too. So much easier when you come home to have something cooked.
Yes sometimes I look at her blog btu I get overwhelmed by all the options and have a hard time deciding what to try... Any reccommendations?
